Spiced Lamb Steaks With Roasted Vegetables, Lentils And Lime

  • 3 4 cup 165g small brown lentils
  • 2 teaspoons smoked paprika
  • 1 tablespoon cumin seeds
  • 1 3 cup 80ml olive oil
  • 1 large carrot peeled cut into 1cm thick batons
  • 1 large parsnip peeled cut into 1cm thick batons
  • 6 about 250g shallots peeled halved
  • 4 about 600g lamb leg steaks
  • 2 limes
  • 1 4 cup coarsely chopped coriander
  • watercress sprigs to serve

  • preheat oven to 200u00b0c cook the lentils in a medium saucepan of boiling water for 10 minutes or until just tender drain well
  • combine paprika cumin and half the oil in a small bowl line an oven tray with baking paper place carrot parsnip and shallots on the tray drizzle with half the spice mixture toss well to combine season with salt and pepper bake in preheated oven for 20 25 minutes or until vegetables are tender
  • rub remaining spice mixture over the lamb set aside to develop the flavours use a zester to remove rind from 1 lime alternatively use a vegetable peeler to peel rind from lime use a small sharp knife to remove white pith cut rind into very thin strips juice both limes combine rind and 2 tablespoons of lime juice with remaining oil in a jug season with salt and pepper
  • heat a char grill pan or lightly greased barbecue on high season lamb with salt and pepper and cook on grill for 3 minutes each side for medium or until cooked to your liking set aside for 5 minutes to rest
  • place lentils in a medium bowl with roasted vegetables add lime dressing and coriander gently toss to combine spoon evenly among serving plates top with the lamb and serve with watercress sprigs
