  • 75g fresh goats cheese like south cape brand
  • 2 teaspoons icing sugar
  • 125g 1 2 cup mascarpone
  • 2 1 2 tablespoons orange blossom honey to serve
  • 6 fresh figs cut into quarters to serve
  • 115g 1 4 loaf unsliced rich fruit bread

  • line a tray with 4 layers of paper towel and place the ricotta on top cover with another 4 layers of paper towel and place in the fridge for 4 hours to drain
  • cut six 15 x 30cm pieces of muslin fold each in half to form squares wet the muslin squares and squeeze out any excess water line 6 medium 80ml 1 3 cup muffin pans with a square of muslin set aside
  • place ricotta goats cheese and sugar in a medium mixing bowl and use a wooden spoon to beat until combined stir in mascarpone until just combined spoon mixture into lined muffin pans and use the back of a metal spoon to press firmly into pans and smooth surfaces fold overhanging muslin over mixture to cover place in fridge for 3 hours or until firm
  • to make fruit bread wafers preheat oven to 160u00b0c line a baking tray with non stick baking paper use a sharp serrated knife to cut bread into 3mm thick slices place in a single layer on the lined tray cook in preheated oven turning over halfway through cooking for 8 10 minutes or until light golden and crisp remove from oven and cool on the tray
  • to serve fold back muslin and use it to lift the moulded cheese one at a time out of pans carefully invert onto serving plates and remove muslin drizzle cheese with the honey and serve with fruit bread wafers and figs
